Noma's deep connection with Japan began in 2009 when Rene Redzepi's encounter with Japanese cuisine sparked a love affair. Since then, multiple trips and collaborations have blossomed, culminating in a pop-up in Tokyo in 2015 and the establishment of a vast network of partners across Japan. Inspired by the Ace Hotel in Kyoto, the idea of a pop-up took root during the pandemic, eventually coming to fruition in 2023 after years of preparation. Their journey has led them to discover the hidden gems of Kyoto and beyond, creating a rich tapestry of culinary and cultural experiences.
